🥪 The Autumn Harvest Turkey Sandwich
Got leftover turkey in the fridge and looking for a tasty way to use it? You’re in the right place.
This sandwich combines roasted turkey, creamy brie, tart apple slices, and a cranberry aioli on toasted multigrain bread—perfectly balancing savoury, sweet, and tangy.

🛒Ingredients
2 slices artisan multigrain or sourdough bread
4–5 slices oven-roasted turkey breast
2 slices creamy brie cheese
¼ apple, thinly sliced (Granny Smith or Honeycrisp work best)
A handful of arugula or baby spinach
1 tbsp cranberry aioli
1 tsp butter
🫙 Cranberry Aioli (makes enough for 2–3 sandwiches)
2 tbsp mayonnaise
1 tbsp cranberry sauce (whole berry or homemade preferred)
½ tsp Dijon mustard
A squeeze of lemon juice
Salt and black pepper to taste
👨🍳 Instructions
Make the Cranberry Aioli:
In a small bowl, whisk together the mayonnaise, cranberry sauce, Dijon, lemon juice, and a pinch of salt and pepper. Set aside.Toast the Bread:
Lightly butter one side of each bread slice. Toast in a skillet over medium heat, buttered-side down, until golden and crisp.Assemble the Sandwich:
Spread cranberry aioli generously on the untoasted sides of both slices.
On one slice, layer turkey, brie, apple slices, and arugula.
Top with the second slice, toasted side facing out.
Final Touch:
Return the sandwich to the skillet for 1–2 minutes per side, pressing slightly, until the brie is just beginning to melt.Slice & Serve:
Cut in half diagonally, plate with a side of kettle chips or a fall salad, and enjoy immediately. Bon Appétit.
